The Royal Gorge was founded by two complete idiots who worked construction for the past 15 years.  Though they weren’t the sharpest tools in the shed, their culinary and people skills far surpassed those of others, so in mid 2009, the two opened a restaurant in Castle Rock, and called it the Royal Gorge.

The Royal Gorge specializes in hot and cold sandwiches, salads, calzones, garlic knots and garlic bread, pasta and of course pizza.  Our meats are made with the finest meats from Thumanns, and are shipped in fresh from New Jersey every week.  Thumanns is a quality brand of meat that is antibiotic free, certified gluten free, certified by the Feingold Association, and has no fillers, low sodium no artificial colors or flavors, no MSG, and no trans fat.  Cappocola, mortadella, prosciutto, Irish Bacon, fresh white meat turkey, ham, salami and rib eye steak are the main ingredients of our wide variety of sandwiches.  Our cheeses include fresh mozzarella, fresh sliced provolone, swiss and cheddar, and white American.  Our produce is cut fresh daily.  No packaged salad or pickled jalapeno’s, if we can get it fresh we will serve it fresh.

The Royal Gorge has both hot and cold sandwiches.  By far the most popular being the Cheese Steak.  The Cheese Steak sandwich comes in 3 different sizes, cowgirl (6”) cowboy (9”) and the gigantic foot long.  This sandwich is made with the finest rib eye steak, white American cheese, onions and any other toppings you wish to add.  All of this comes in an authentic Amorosa roll direct from Philly.  Other sandwiches include the Ruben, Grilled Pastrami, the Sasquatch, the Irishman, El Dorado, Sausage sandwich, Meatball Sub, and of course the signature Royal Gorge.

 Cold sandwiches include Tom’s Old Fashioned (a traditional Italian Hoagie with mortadella, ham salami, provolone cheese and mozzarella cheese, topped with crisp lettuce, tomato, onion and Italian dressing on an Amoroso roll.  Other cold sandwiches include the 5280, Kick’n Cuke the Yeti, the Boulderite, Sicilian Sub, the Native, and the Grizzly.  You can also build your own sandwich, with your own choice of meat cheese and toppings.  All sandwiches are made fresh to order, and topped with the freshest produce.

A Royal Gorge Salad is not your typical salad.  All salads are made with a mix of romaine, spinach and iceburg lettuce cut fresh daily.  Our salads include a House, Chicken, Tuna, Egg, Chef and our famous Antipasto.  The Chicken, Tuna, and Egg salad are made fresh daily.  We also offer a smaller portioned side salad.  Try our homemade Jalapeno Ranch dressing.

Lets talk pizza.  Our pizza is said to be the best west of the Mississippi.  This is not our claim, but the claim of our many guests from New Jersey.  On any given day you can sit next to someone and the conversation will ultimately end up by one party asking which exit you used to live off of in Jersey.  We make our dough from scratch, we mix it, ball it, let it rise and hand toss it into the perfect thin crust pie.  We then topped with our homemade sauce, not from a can, HOMEMADE, then add the fresh mozzarella and your favorite topping and you simply have the best pizza in Colorado.  You can buy your pizza buy the slice, a small which is 12”, medium at14”, a large at 18”, or our famous house pie which is 20”.  We offer a large variety of topping.  Complimenting our pizza are our Calzones.  Calzones are made with our special homemade herb Ricotta cheese, and filled with any topping you like.  To say the least, they are HUGE, so bring your appetite.
